For lunch I made my family and I a Lemon Quinoa Salad :) It was delicious
- 2 cups of Organic Quinoa
- 2 ripen vine tomatoes (diced)
- 1 whole cucumber (diced)
- 1 whole carrot (medium sized; diced)
- 1 Lemon (juice and for garnish)
- Handful of Cilantro (for garnish, as well)
- Salt and Pepper to taste
-When making Quinoa, it should be a 2 to 1 ratio of water. So with that being said, 2 cups of Quinoa is roughly about 4 cups of water.
-After cooking the Quinoa, set aside to let it cool down, for about 30-45 minutes or so
-In that time, just slice and dice up everything.
-When Quinoa is cooled down, put the tomatoes, cucumbers, carrots, and juice of half a lemon (I think that’s about 1 tablespoon)
-Mix with a salad spoon, sprinkle cilantro, and slice up the other half of the lemon into little wedges, and WAAAH LAA! :)
